CORN ON THE COB

Cooking time:                1 min per ear of corn

This simple recipe comes from farmer Joe Jacobs of Bertuzzi’s Farm Market in Mimay NJ (USA). The secret is choosing good tender, sweet corn. Our favorites are Silver Queen, and some of the newer hybrid white corn, and mixed white and yellow corn, such as Peaches and Cream.

Ingredients:

1-6 ears of corn (as is from the market – not husked)

Directions:

Arrange the ears on the turntable of the microwave oven. “Zap” them for 1 minute for each ear (i.e., 4 minutes if you placed 4 ears of corn). Let them cool for a minute or two, and then husk and serve.

(We usually serve family style, un-husked, and let the diners husk there own at the table. The husks keep the corn warm).
